A tasty and simple vegetarian sammich arose naturally the day after we made Mexican Lasagna. While the lasagna was a big hit, I was the only one who wanted this sandwich the next day. Who can understand the taste buds of others?
You can easily make it vegan or gluten-free.
The Layers:
Bread (GF for you GFers!)
a slather of vegetarian refried beans
some cheese, vegan cheeze, or nothing
(Toast all those together).
Add sliced tomato and fresh lettuce and if you like a dab of hot sauce or enchilada sauce. Eat!

I have eaten these for years-- I was a O-L vegetarian for about 7 years. I use the spicy flavored refried beans. I toast the bread, put mayo on sides, some good green leaf lettuce, some ranch dressing, a sprinkle of sharp cheddar. Also, green bean sandwiches are good too (if you have not tried them.) Use a roll or French bread because salsa can get messy. Get fresh long green beans and gently steam. Add salsa and cheese-- instant sandwich.
