I suggest opening a can of vegetarian refried beans, add a little of the enchilada sauce to it, and dice a few slices of cheese, preferably cheddar, into beans. Heat until cheese melts. Put on top of the tortillas and then add cooked egg concoction. For those inclined to a hotter mouthful, jalapeno peppers sprinkled on top would add a kick.

Goofy GrandmotherAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-7730668696959561464.post-60325934021899293652013-06-23T15:45:12.789-04:002013-06-23T15:45:12.789-04:00Is that a modified version of chiles relleno? I use the spicy flavored refried beans. I toast the bread, put mayo on sides, some good green leaf lettuce, some ranch dressing, a sprinkle of sharp cheddar. I found it in a Hawaiian Cookbook of all places (It was called PuPus to da Max - how could I not buy?) All you do is put kimchi in a food processor to make it small and almost paste-like, then you mix by hand with cream cheese. I think it's a 1:1 ratio. Then you can use it as a hot or cold dip, or a sandwich spread. The Stoner Gourmandhttps://www.blogger.com/profile/02717526511108370543noreply@blogger.comtag:blogger.com,1999:blog-7730668696959561464.post-60848212441662377722011-08-01T22:55:08.591-04:002011-08-01T22:55:08.591-04:00Yum.
